I tested the difference between thawing and water thawing of aluminum plate when I was making thawing plate before. Aluminum plate has fast heat transfer but low specific heat capacity, that is, it is easy to dissipate heat but it is also easy to heat up. The heat transfer of water is relatively slow, but the specific heat capacity is high, that is, the cooling is not fast but continuous, so the aluminum plate can be used to quickly dissipate heat in the contact area, and the heat at the bottom water pad, it might also be a selling point. (You can also understand that using water pads instead of air circulation is more efficient from a thermal point of view).
